? Healthy Tahini Cake ? Vegan, Oil free, Refined sugar free

Wet Ingredients:
4 Tbsps ground chia seeds + 12 Tbsps water
3 ripe bananas, mashed
1/2 tsp vanilla bean paste
1/4 cup fresh orange juice
3/4 cup tahini
1/4 cup carob molasses


Dry Ingredients:
1/2 cup oat flour
1/2 cup whole wheat flour
2 tsps baking powder
1/4 cup shredded coconut
1/4 tsp salt

To the top:
Chopped nuts (I used almonds)


Directions:
▪Preheat your oven to 180C.
▪Start with preparing chia + water gel mixture. For this, simply stir the ground seeds and water, and set aside for 10 minutes.
▪In a medium-sized bowl, whisk to combine all dry ingredients.
▪In a separate bowl, whisk all wet ingredients, including your the chia gel.
▪Now add your dry mixture into the wet mixture bowl and stir with a spatula just to combine (avoid overmixing).
▪Fill your parchment-lined 20x20cm baking dish with the batter, smooth the top and cover with chopped almonds (press the nuts gently into the batter).
▪Bake for about 60 minutes (or until a toothpick inserted to the center comes out clean).
